Mikkeller Brewing San Diego C&D Series
Mikkeller Brewing San Diego is taking the Mikkeller ethos to heart, branching out from traditional styles and pushing creative boundaries. Brewers Daniel Cady and Chris Gillogly latest venture into the unknown is being done with Waves IPA. An already delicious IPA is getting a heavy does of Brett and dry hopping as the boys look to get funky with their brews.
What has come about is a research and development run of Waves IPA, dubbed the "C&D Series."
The first variation the two brewers are working on take the Waves base, but utilize Chinook and Mosaic Hops for the dry hopping. On top of that, instead of using their standard ale yeast, this experimental IPA will be fermented with Belgian Bastogne Yeast.
Another variation will showcase Brett C. Chris and Dan fermented a batch of waves with 100% Brett Clausenii then split the batch for separate dry hopping additions. One of the batches will consist of Citra, Amarillo and Polaris hops. The other batch will feature a Chinook, Columbus, and Amarillo dry hopping.
The last experimental batch of Waves will be dry hopped with Equinox and Chinook. This will be another funky genus of Waves, fermented with a proprietary Brett strain.
