Æblerov have, since their inception 5 years ago, worked hard to be where they are today; at the very forefront of cider making in Denmark. From their humble beginnings when they stole apples from lonely trees in their neighborhood and learned about the different processes of pressing, fermentation etc in their parents garage, to hosting the first ever cider festival in Denmark and bringing this great beverage on the map as an alternative to beer and wine, but also on the menu at top notch restaurants such as Noma, Relæ, Amass to name a few, and, of course, various Mikkeller bars.
These days they carefully handpick the organic fruits from selected harvests from high quality fruit orchids around Denmark, before adding their touch and by so, pushing the boundries of cider. Obviously, we couldn't resist working with them when the opportunity arose.
Lan-xin Foo, head brewer at WarPigs Brewpub, had this to say about the collaboration:
We received apple juice from Æblerov then blended it with a blonde we brewed, 50/50, into Tokaji barrels. We decided to go with a straw blonde beer to compliment the juice and fermented the beer with an Abbey Ale yeast. The juice was unpasteurized so there was some refermentation once we blended the two in the barrels. It drinks nice and tart with a little bit of funk."
