Mikkeller pops up in Portland

 

The old Burnside Brewing location in Portland, Oregon, gets new life as Mikkeller opens up a taproom pop-up on June 8. Mikkeller have teamed up with restaurant entrepreneurs ChefStable for the project.

Mikkel Borg Bjergsø, owner and founder of Mikkeller, is finally bringing his world-renowned beer to Portland. The city has been on Mikkeller’s wish list for a long time, and when the possibility arose to move into the old Burnside Brewery location, it was an obvious decision to arrange a Mikkeller pop-up during the summer months. 

“The location in itself is amazing, and we love the city and the atmosphere and have a lot of friends there. On top of that, the existing food and brewing scene is awesome. Starting a pop up with a great partner is the best way to start off and hopefully establish something more permanent,” says Mikkel Borg Bjergsø, who has known Kurt Huffman, Managing Partner of ChefStable, for a while.

The restaurant entrepreneur is excited to bring Mikkeller to Portland:

“I met the guys from Mikkeller about a year ago in Portland, and we had a great time.  I appreciate their approach to making beer, I like their story, I respect how they run their company, and I love their sense of humor.  I knew right away that collaborating with them would be exciting, fun and easy.

“Mikkeller brings a perspective and approach to beer making that is different than what the majority of breweries here in Portland have.  If Portland is going to continue to be the best craft brewing city in the United States, we need outside perspectives and different approaches to making beer,” says Huffman.   

Top breweries and chefs

The concept of the Mikkeller Portland pop-up will be a Mikkeller-driven taproom featuring beers from the Danish craft brewery as well as other top craft breweries and collaborators.

The pop-up also gives ChefStable and Mikkeller the great opportunity to work with a dream-duo from Las Vegas. After two years of running Momofuku for David Chang in Las Vegas, Shaun King is moving to Portland to open a Japanese-inspired restaurant along with his wife, Jamie Neering, who was overseeing Michael Symon's bar program.  The two will create a pop-up within a pop-up and serve portions of the menu – which will offer both food and cocktails – that they plan to feature in their future restaurant.  The focus for the pop-up menu will be Japanese rice and noodle dishes. 

“This is a great opportunity for Shaun and Jamie and it fits in perfectly with the Mikkeller pop-up,” Huffman explains.

Mikkeller and ChefStable do not plan to do any radical remodeling of the space, but are working to infuse the location with some of the Nordic design characteristics for which many of the Danish brewery’s locations are well known.
